Mince Pie Muffin

A soft, moist muffin made with Famasons Vanilla Sponge Cake Premix hides a spoonful of Famasons Fruit Mince in the centre, creating a delicious mince pie-style filling in every bite. The tops are finished with a buttery spiced streusel made with cinnamon, nutmeg and mixed spice, then lightly dusted with icing sugar for a bakery-style finish.

Streusel

| 105 g | Flour, cake |
| 55 g | Sugar, light brown |
| 1 g | Cinnamon, ground |
| 1 g | Nutmeg, ground |
| 0.5 g | All spice, ground |
| 60 g | Yellow Master Margarine, melted |
Muffins:
| 200 g | Famasons Vanilla Spong Cake Premix |
| 1 unit | Egg, large |
| 50 g | Sour cream |
| 80 ml | Milk, full cream |
| 75 g | Famasons Fruit Mince |
Filling:
| 60 g | Famasons Fruit Mince |
| 50 g | Sugar, icing |

Method:
- Collect all the ingredients from
- Ensure all ingredients are at room
- Line a muffin tin with 12 Famasons Festive muffin
- Melt the margarine for the streusel in the microwave for 45 seconds on Set aside.
- Preheat the oven to 175 °C
To prepare the streusel::
- In a medium mixing bowl, combine the flour, sugar, cinnamon, nutmeg and
- Pour in the melted, cooled margarine and stir with a fork until large clumps form and no dry flour remains.
- Refrigerate the mixture until ready to use.
For the muffin:
- In the bowl of a mixer combine the Famasons Vanilla Sponge Cake Premix, eggs, sour cream, milk and fruit mince.
- Mix on low speed with a paddle until just
- Fill each muffin liner to 1/3 full.
- Place one teaspoon of fruit mince in the centre of each muffin
