Mince Pie Muffin

Bring classic festive flavours into a cosy, handheld treat with these Mince Pie Muffins. A soft, moist muffin made with Famasons Vanilla Sponge Cake Premix hides a spoonful of Famasons Fruit Mince in the centre, creating a delicious mince pie-style filling in every bite. The tops are finished with a buttery spiced streusel made with cinnamon, nutmeg and mixed spice, then lightly dusted with icing sugar for a bakery-style finish.

Streusel

Muffins:

200 g

Filling:

Method:

  1. Collect all the ingredients from
  2. Ensure all ingredients are at room
  3. Line a muffin tin with 12 Famasons Festive muffin
  4. Melt the margarine for the streusel in the microwave for 45 seconds on Set aside.
  5. Preheat the oven to 175 °C

To prepare the streusel::

  1. In a medium mixing bowl, combine the flour, sugar, cinnamon, nutmeg and
  2. Pour in the melted, cooled margarine and stir with a fork until large clumps form and no dry flour remains.
  3. Refrigerate the mixture until ready to use.

For the muffin:

  1. In the bowl of a mixer combine the Famasons Vanilla Sponge Cake Premix, eggs, sour cream, milk and fruit mince.
  2. Mix on low speed with a paddle until just
  3. Fill each muffin liner to 1/3 full.
  4. Place one teaspoon of fruit mince in the centre of each muffin
  5. Fill each muffin liner until ¾ full.
  6. Top each muffin with a heaped tablespoon of
  7. Place in the middle of the Bake for 18-22 minutes.
  8. Remove from the oven and allow to cool
  9. Dust with icing sugar

Storage:

  1. Store in an airtight container for up to 4 days.
  2. Best served warmed.
