Caramel Biscuit Swirl Ice Cream

Swirls of Caramel Biscuit Spread are folded through the ice cream, creating ribbons of rich, buttery caramel in every bite. A generous topping of additional spread and a sprinkle of Caramel Biscuit Crumble add crunch and visual appeal, making it as eye-catching as it is delicious.

 Condensed milk, sweetened

1/8 tsp (0.5 g)

 Xanthan gum

500 ml

 Cream, whipping, chilled

2 tbsp (30 ml)

 Glucose syrup

1 tsp (5 ml)

 Vanilla extract

Method:

  1. Collect all the ingredients from storage.
  2. In a small bowl, whisk the xanthan gum into 2 tbsp of the condensed milk until smooth.
  3. In a large, chilled bowl, whip the cream to soft peaks.
  4. In another bowl, mix the remaining condensed milk, glucose syrup, and vanilla. Add the xanthan condensed milk paste and whisk gently to incorporate.
  5. Carefully fold the whipped cream into the sweetened condensed milk mixture with a spatula
    until just combined. Keep the mixture airy (don’t overmix).
  6. Pour into a freezer-safe container, cover, and freeze for 2 hours.
  7. Remove from the freezer, gently stir and then pour the Famasons Caramel Biscuit Spread and Famasons Caramel Biscuit Crumble into the base and gently fold through a maximum of 5 times to create swirls in the ice cream.
  8. Add 50 g of the Famasons Caramel Biscuit Spread on the top in a zig-zag pattern, and using a skewer, create swirls in the top of the ice cream.
  9. Sprinkle the 20 g of Famasons Caramel Biscuit Crumble on the top.
  10. Recover and then freeze for at least 12 hours before using.

Storage:

    1. Store in an airtight container in the freezer for up to 1 month.
