Chocolate Cake Rocky Roads

A decadent twist on a classic treat, these Chocolate Cake Rocky Road Squares combine soft chocolate cake cubes with layers of rich milk and dark couverture chocolate for the ultimate indulgent bite. Made with Famasons Chocolate Cake Premix, the moist cake pieces are folded into the chocolate mixture along with crunchy almonds, fluffy mini marshmallows and crushed Biscuits for irresistible texture and flavour contrast.

Set into generous slabs and cut into neat squares, this rocky road delivers a perfect balance of chewy, crunchy and creamy in every piece. Ideal for bakery counters, confectionery displays, or gifting, it offers bold chocolate flavour with a premium finish.

Ingredients:

Chocolate Cake

200 g

 Famasons Chocolate Cake Premix

75 g

 Eggs, large

80 g

 Water, cold

Rocky Roads:

300 g

 Famasons Milk Couverture Chocolate

300 g

 Famasons Dark Couverture Chocolate

45 g

 Yellow Mastercraft Margarine

100 g

 Almonds, raw, chopped

125 g

 Marshmallows, mini, whole

150 g

 Famasons Biscuits All Day, crushed

Method:

  1. Collect all the ingredients from storage.
  2. Preheat the oven to 180 °C.
  3. Line two 32 cm x 23 cm baking trays with parchment paper and grease it with Pan Release Greaso.
  4. On a clean cutting board, roughly chop the almonds into large chunks.
  5. In a bowl, crush the Famasons Biscuits All Day into large chunks.

Chocolate Cake:

  1. In a bowl, combine the Famasons Chocolate Cake Premix, the eggs and the water.
  2. Whisk slowly to combine the ingredients.
  3. Scrape down the sides of the bowl and whisk thoroughly until completely incorporated.
  4. Place the batter in the lined cake tin and bake for 25-30 minutes until a skewer inserted comes out clean.
  5. Remove from the oven and allow to cool.
  6. Once cool, cut the cake into 2 cm cubes.

Rocky Roads:

    1. Place the Famasons Milk Couverture Chocolate, Famasons Dark Couverture Chocolate and the butter in a microwave safe bowl.
    2. Microwave in 30 second increments, stirring in between until the chocolate is melted and smooth, this should take a total of approximately 1.5 minutes in the microwave.
    3. Stir in the chopped almonds, mini marshmallows, crushed Famasons Biscuits All Day, and cubes of chocolate cake.
    4. Mix with a spatula to fully coat the ingredients with chocolate.
    5. Pour the rocky road mixture into the second prepared cake in and spread out evenly.
    6. Place in the refrigerator at < 4 °C for up to 3 hours or until fully cool and set.
    7. Remove from the refrigerator and allow to sit for 30 minutes before cutting.
    8. Cut into 5 cm x 5 cm squares.

Storage:

    1. Store in an airtight container at room temperature for up to 7 days.
    2. Alternatively, store in an airtight container in the refrigerator at < 4 °C for up to 14 days.
